Meal Planning Week 3 – 13 January

I’m really pleased that I managed to stick to my meal plan last week…

The plan for last week was:

  • Monday – bean and potato chilli – from the busy mums cookbook
  • Tuesday – jacket potato with bolognese for Daniel and cheese for me
  • Wednesday – slow cooker beef casserole, taken from another meal planners blog! See here for details
  • Thursday – some sort of pasta, will probably use up any vegetables we still have
  • Friday – fish and chips

The bean and potato chilli was lovely, although Daniel didn’t enjoy too much of it. I made it quite mild and would probably add a bit more chilli in next time for my husband and I. One we will use again.

The slow cooker beef casserole was a big winner with my husband. Daniel enjoyed the veg, but as he doesn’t have many teeth in yet he can be a bit hit and miss when having meat. I halved the recipe as this was only feeding my hubby and son, and there is a portion left over in our freezer for another time. The pasta I made on Thursday was just a quick one, I softened some onions, added a little garlic and chilli. I had a green pepper left over from the night before so chopped that up and added in. I cooked some pasta, stirred in a tin of chopped tomatoes and then added in the onion mix.

I then put it all in an oven dish, chopped up some mozzarella to spread over the top and popped in the over whilst I did a garlic baguette. Quick and easy and was quite tasty too.

So…. this week’s meal plan looks like this… It’s a strange week as my husband is working late, which means that Daniel and I will eat at the usual time and my husband when he gets in around 20:15

Monday – Veg lasagne

Tuesday – Slow cooker beef & ale casserole (Schwartz packet mix I found in cupboard)

Wednesday – Rissotto

Thursday – Sausage casserole (slow cooker)

Friday – fish pie (freezer from week 1 plan)

  1. Seeing you were having risotto inspired me, I’m going to have a prawn and pea one on Friday – while everyone else has fishfingers, wedges and beans!

  2. Well done on sticking to the plan! You have triggered something in my brain now to want vegetable lasagne – have never actually made one which I surprise myself thinking about! Have a great week!
